Chicken Enfrijoladas Recipe

(4 servings)

2 cans of La Sierra Bayo Beans

12 Blue Corn Tortillas

1 large chicken breast cooked and shredded

1 cup of water

1 teaspoon cumin

1 teaspoon Epazote

1/2 thinly sliced onion

1 cup sour cream

1 cup mozzarella cheese




Heat the oil in a saucepan and fry the tortillas on both sides, place them on a plate and set aside.

Add the beans to the blender with a cup of water and cumin. Mix until you have a sauce with a homogeneous texture.

Pour the contents of the blender into a pan. Place on the heat and add the epazote, let cook about 10 minutes until the sauce takes a semi-thick consistency. If you need it, you can add more water.

When ready, pour the fried tortillas into the bean sauce one by one, and once covered in bean sauce, place them on a plate and fill with chicken and fold in the middle.

Repeat this procedure with all the tortillas and when finished, cover them with more bean sauce.

Garnish with sour cream, cheese and onions.
