Jamaica Tacos — onion + chilli + sautéed Hibiscus Flower
After soaking the Hibiscus Flower, drain it very well and cut it into thin strips. Sauté chopped onion in a little oil and, if you enjoy some heat, add serrano or morita chilli. Add the Hibiscus Flower and cook for a few minutes, seasoning with salt and pepper.
Serve in warm corn tortillas and finish with salsa, fresh coriander and a squeeze of lime. You can also add avocado or fresh cheese.
And that's not all! Here are some more ideas for using the flowers after soaking:
- Hibiscus Tinga — Hibiscus Flower simmered with tomato, onion and morita chilli.
- Crispy Hibiscus Tacos — filled, rolled and fried until golden and crisp.
- Hibiscus Quesadillas — sautéed Hibiscus Flower combined with cheese and corn tortillas.
- Hibiscus & Mushrooms — a more substantial version, sautéed with onion and spices.
- Hibiscus Tostadas — the same savoury filling served on a crispy tostada with avocado, salsa and onion.
